Cheese

All of our cheeses are made in our on-farm creamery, using the freshest milk from our grazing Jersey herd. We age the cheeses from anywhere from two weeks to a year, depending on the cheese. Our cheese cave is built into the side of a hill attached to our creamery, using the earth’s protection from heat to help maintain just the right aging conditions for our cheeses. We currently make twelve kinds of cheese, available seasonally, all made using our own original recipes. At present, all our cheeses are sold direct only; we do not currently wholesale our cheese to any retail stores. Softer, Younger Aged Cheeses

Little Something – in the family of a traditional Brie or Camembert, this soft and buttery bloomy rind cheese is aged to perfect gooey-ness. $20 each. One wheel is about ¾ of a pound.

Little Pepper

Little Pepper – a young and yeasty gem of a cheese. Spreadable like a cream cheese, very mild flavor, enhanced with fresh cracked pepper on top. $20 each. One wheel is about ¾ of a pound.

Little Doughnut – a young bloomy rind cheese with a thin layer of ash just below the surface. Beautiful to cut into and gorgeous on a cheese plate. Soft and creamy inside with a bright, fresh lemony flavor. $20 each. One wheel is about ¾ of a pound.

Firm, Aged Cheeses:

Fizz

Peach Fizz – Aged 2-3 months, this firm and dense washed-rind cheese is washed three times a week with Westport River Vineyard’s Farmer’s Fizz sparkling wine. Our first and most popular cheese, with a sharper flavor and almost crumbly texture. Each wheel is about 3 pounds. Can be cut in 1 pound increments. $32 per pound.

Main Squeeze

This semi-soft cheese is aged about two months, and has a buttery, creamy flavor and a natural rind that yields easily to a knife. It’s a delightful surprise that disappears quickly when placed on the table, and melts in the mouth! Each square “wheel” is about 1 pound, $32 per pound.

Sassy Lady

This cheese is sassy in all the right ways. Under its naturally wrinkly rind, you’ll find a tangy, soft interior with just the right balance of creaminess and acidity to wake up your taste buds. Wonderful for cooking, crumbled in salads, or on its own. Each wheel is about 2.5-3 pounds, $32 per pound.

Tomme stone wall

Beach Stone – This smooth textured natural rind cheese is an easy pleasing small rustic tomme style. Aged for three months, the cheese has a mild grassy and nutty flavor and a slightly flexible texture.  Each wheel is about 1 pound. $32 per pound.

Time & Hope

A long-aged natural rind cheese, aged 8 months. Time and Hope is an alpine-style cheese with a nutty, brown-buttery, mildly Swiss-y flavor. Made with spring and summer milk, it’s sunshine locked up and aged to perfect brightness, a real treat in the colder months. Each wheel is about 3.5-4 lbs. $32 per pound.

Big Blue

Our latest experiment is a creamy and piquant blue cheese. We used peak fall pasture milk to make this batch of cheese with a dense, creamy paste. We pierced the wheels to allow the blue to flourish, and then aged them to form a beautiful natural rind. Slightly meaty, it’s just the cheese to wake up your taste buds crumbled in a salad. A drizzle of honey would make a perfect pairing. Each wheel is about 4-5 lbs, $32 per pound.
